Ginger Cookies

December 17, 2008

3/4 cup butter or margarine
1 cup white sugar
1 egg
1/2 cup molasses

Cream together.

Mix:
2 1/2 cups white flour
2 tsp baking soda
2 tsp ginger
1 tsp cinnamon
1/2 tsp salt

Mix with wet ingredients. Roll into 1″ balls, roll in sugar.
Bake at 350° for 10 minutes.

Penny’s Chocolate Fudge

3 cups milk-chocolate chips
1 can Eagle Brand Milk
1/4 cup butter

Melt in microwave, stir and pour into  waxpaper lined pan. Cool and eat!

Caramel Popcorn Balls

1/4 cup butter
1 cup brown sugar
1/2 cup corn syrup
2/3 cup sweetened condensed milk
1/2 tsp vanilla
20 cups popcorn

In saucepan, combine butter, sugar and corn syrup. Stir well and bring to boiling over medium heat. Stir in condensed milk; simmer, stirring constantly, until mixute comes to soft ball stage (234° to 238° F). Stir in vanilla. Pour over popped corn and stir to coat. Butter hands lightly. Shape into
balls. Makes about 15. These are delicious!

The Great Pumpkin Cookie

2 cups flour
1 cup oats
1 tsp baking soda
1 tsp cinnamon (can add some nutmeg too if you like!)
1/2 tsp salt
1 cup brown sugar
1 cup white sugar
1 egg slightly beaten
1 tsp vanilla
1 cup pumpkin
1 cup butter (or margarine) softened
1 cup chocolate chips
1 cup raisins (yes, you can skip this one or put in less…)

Combine flour, oats, baking soda, connamon and salt. Cream butter, mix in brown and white sugar, add egg and vanilla, mix until fluffy, alternate additions of pumpkin and dry ingredients to butter mixture, stirring well. Mix in chocolate chips and raisins.
Bake at 350° for 20 minutes.

Crunch Bars

35 premium plus crackers
1/2 cup butter or margarine
1/2 cup firmly packed light brown sugar
1 cup chocolate chips (or mix 1/2 butterscotch chips and 1/2 chocolate… you decide)
cushed walnuts or almonds or candy cane (optional)
Directions:

Preheat oven to 400°(F).
Place crackers in a single layer in foil-lined 15×10x1 inch baking pan.

Place butter and sugar in saucepan; cook on medium-high heat until butter is mealted and mixture is well blended, stirring occasionally. Bring to boil; cook 3 min. without sitrring.
Spread over crackers.

Bake 7 minutes. Immediately sprinkle with chocolate chips; let stand 5 min. Spread melted chocolate over crackers. Sprinkle with walnuts (or almonds, crushed candy cane or whatever you like… or nothing at all!!); cool completely. Break into peices.

Short Bread

1 cup butter
1/2 cup icing sugar
- dash salt
1 tsp vanilla

Beat 3 minutes, add 1 1/2 cup flour.
Beat 10 minutes.
Drop by teaspoon on cookie sheet.
Press with fork.

Bake at 350° for 10 minutes no longer.

Chocolate Oatmeal Cookies

This is a no bake drop cookie in a macaroon style. Very easy… very yummy!!
4 cups white sugar
1 cup butter
1 cup milk
14-16 oz bag choc chips (semi)

Bring almost to boil, then add:

6 cups oatmeal
2 cups coconut
pinch of salt
dash of vanilla
2+cups rice krispies

Drop spoonfuls of mixture onto wax paper and freeze.
